Summer Tuna Salad With A Mediterranean Twist!

Mediterranean Quinoa Tuna Salad
Ingredients
- 2 large cans of tuna in spring water, drained
- 1/2 cup quinoa
- 1/2 teaspoon vegetable stock
- 1 cup cubed and roasted butternut squash
- 3/4 cup peeled roasted sweet potato
- 1/2 large cucumber, diced
- 1/2 cup baby spinach
- 1/2 cup thawed frozen peas
- 1/4 cup canned chickpeas, rinsed and drained (for added protein)
- 1/4 cup crumbled low-fat feta cheese
- 1/2 cup Greek yogurt (swap for mayo for additional creaminess)
- A few sprigs of fresh dill or parsley (optional)
- 4 tablespoons lemon juice
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Optional: A handful of olives, halved
Preparation
1. Cook the Quinoa
Rinse the quinoa and place it in a saucepan with 1 cup of water and the vegetable stock. Bring to a boil, then cover and reduce to a simmer for about 15 minutes until the water is absorbed and the quinoa looks slightly translucent. Fluff with a fork and let it cool.
2. Roast the Vegetables
Preheat the oven to 350°F (175°C). Toss the sweet potato and butternut squash with olive oil, salt, and smoked paprika. Spread on a lightly oiled baking tray and roast for 15-20 minutes, until tender and slightly caramelized. Allow to cool.
3. Prep the Salad Components
In a mixing bowl, combine the baby spinach, drained tuna, diced cucumber, peas, chickpeas, and crumbled feta.
4. Combine Ingredients
Once the quinoa and roasted vegetables have cooled, add them to the mixing bowl.
5. Make the Dressing
In a small bowl, mix the Greek yogurt (or mayo), lemon juice, and a sprinkle of salt and pepper. Pour this dressing over the salad and toss gently until everything is well coated.
6. Garnish and Serve
Add chopped fresh dill or parsley for a bright finish and stir in olives for an extra burst of flavor if desired. Serve chilled.
