With that said, we're introducing twisted recipes!

1. Quinoa Power Bowl with Avocado and Black Beans
π₯Twist: Southwestern Flair
Ingredients:
- 1 cup cooked quinoa
- 1 can black beans, rinsed and drained
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cup corn (fresh or frozen)
- 1/2 cup diced red onion
- 1/2 cup chopped bell peppers (use a mix of colors)
- Juice of 1 lime
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh cilantro (optional, but highly recommended)
- 1/2 cup crumbled feta or cotija cheese (optional)
Instructions:
1. Combine cooked quinoa, black beans, avocado, tomatoes, corn, onion, and bell peppers in a large bowl.
2. Drizzle with lime juice and sprinkle with cumin and smoked paprika.
3. Season with salt and pepper, then toss gently.
4. Top with fresh cilantro and cheese if desired. Enjoy at room temp or chilled!
2. Sheet Pan Chicken with Roasted Rainbow Vegetables
π«Twist: Mediterranean Vibes
Ingredients:
- 2 chicken breasts
- 2 cups of mixed veggies (zucchini, cherry tomatoes, bell peppers, red onion)
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- Juice of 1 lemon
- Salt and pepper to taste
- 1/4 cup kalamata olives, pitted and halved
Instructions:
1. Preheat oven to 400°F (200°C).
2. Arrange chicken on one side of a baking sheet and veggies on the other.
3. Drizzle everything with olive oil and lemon juice, then sprinkle with oregano, garlic powder, salt, and pepper.
4. Bake 25-30 minutes until chicken reaches 165°F and veggies are tender.
5. Add olives for the last 5 minutes of baking. Let chicken rest before slicing. Serve warm!
3. Berry Chia Pudding Parfait
π΄Twist:Tropical Delight
Ingredients:
- 1 cup coconut milk (or milk of choice)
- 1/4 cup chia seeds
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1 cup tropical mixed fruits (mango, kiwi, pineapple)
- Optional: shredded coconut or chopped macadamia nuts for topping
Instructions:
1. Mix coconut milk, chia seeds, maple syrup, and vanilla in a jar or bowl.
2. Stir well and let sit 5 minutes, then stir again to prevent clumping.
3. Cover and refrigerate until thick and pudding-like (at least 2 hours or overnight).
4. Layer with tropical fruits and top with coconut or macadamia nuts. Devour immediately!
4. Immune-Boosting Lentil Spinach Soup
π₯₯Twist: Spicy Coconut Twist
**Ingredients:**
- 1 cup dried lentils, rinsed
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 cups fresh spinach
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
**Instructions:**
1. SautΓ© onion, carrots, and garlic in a large pot until softened (about 5 minutes).
2. Add lentils, broth, cumin, turmeric, red pepper flakes, salt, and pepper.
3. Bring to a boil, then reduce heat and simmer until lentils are tender (20-25 minutes).
4. Stir in coconut milk and spinach, cooking another 3-5 minutes until spinach is wilted. Serve hot!
5. Crispy Baked Sweet Potato Fries
πΏTwist: Herb-Infused Sweet Potato Fries
Ingredients:
- 2 large sweet potatoes, cut into thin wedges
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary or thyme
- 1/2 teaspoon cayenne (adjust to heat preference)
- Salt and pepper to taste
Instructions:
1. Preheat oven to 425°F (220°C).
2. Toss sweet potato wedges with oil, paprika, garlic powder, herbs, cayenne, salt, and pepper in a large bowl.
3. Spread in a single layer on a baking sheet (don’t overcrowd!).
4. Bake 25-30 minutes, flipping halfway through, until crispy and golden. Serve with yogurt mixed with herbs as a protein-rich dip!
Because let's be real: life's too short for bland chicken and sad salads.
