Two Great Recipes
Summertime is almost here, folks! Time to break out the new summer recipes for your enjoyment! We've got a couple of really good ones for you.
They are delicious and (of course) full of vitamins and necessary nutrients to help you stay on target with your healthy lifestyle goals!
As with all our recipes here on Relax and Reclaim, you'll be getting the easiest preparation instructions to make sure that you can duplicate the recipe(s) and (if you like) modify it to your own taste!
Try preparing them (or have someone else do it for you) & let everybody know what you think. Comments are always welcome.
(Breakfast, dessert, snack. You name it, they are delicious anytime.)
1/2 cup peanut or almond butter
12 (6 to 7-inch) flour tortillas
8 oz minced pineapple, juice drained
2 medium bananas, thinly sliced
2 large, peeled and chopped (approximately 1 cup)
6 to 8 strawberries, hulled and chopped (approximately 1 cup)
1-1 1/2 cups flaked coconut
Preparation:
Spread 2 teaspoons of peanut or almond butter on each tortilla. Top each tortilla with 1 heaping tablespoon each of pineapple, bananas, kiwi, and strawberries. Sprinkle with coconut. Roll up tortillas.
A Simple Summer Salad
- 3 cups chicken stock
- 1 cup wild rice
- 1 tablespoon of lemon juice
- 1 tablespoon of lime juice
- 2 teaspoons extra virgin olive oil
- 3 kiwi fruit, peeled and diced
- 1 cup seedless red or green grapes, halved
- 1/2 cup of chopped walnuts
Preparation:
- Place broth in a medium saucepan, and bring to a boil. Add rice, reduce heat to low, and simmer, covered, for 40-45 minutes, or until tender. Drain excess liquid, cover, and let cool.
- Whisk together lemon juice, lime juice, and oil in a small bowl. Season with salt and pepper.
- Place cooled rice in a salad bowl, along with kiwi, red grapes, and walnuts. Add favorite dressing, and gently toss.
Fruit-Filled Cornucopia Burritos

Sometimes, the only way to ensure a recipe will be a hit is to make it. Try it out for yourself and see what you think.

Ok, I know that summer is basically over, but I have to say that these two recipes are still THE BOMB!!! DELISH!!!!!
