Refreshing Summer Tuna Salad: A Perfect Picnic Companion

Tuna salad is considered to be a staple food for warmer weather. 

Real simple stuff. 

Tuna, mayo vegetables, mix, chill and serve. 

Not too complicated. 

Well, this recipe is also very simple and just as delicious! 😋 

This salad is perfect for a lunch and a great way to add lots of colorful vegetables to your meals. 

You'll really impress your family on your next picnic with this dish. It tastes absolutely amazing when you take time to make it.

Let's get into it!

Ingredients

Two large cans of tuna in spring water drained

One-half cup of quinoa

One-half teaspoon of vegetable stock

One cup of cubed and cooked butternut squash

Three-quarters cup of peeled sweet potato 

One-half large cucumber

One half cup of baby spinach

One half cup of thawed frozen peas

One quarter cup of kidney beans

One quarter cup of low-fat feta cheese

One half cup of your favorite mayo (amount depends on your personal preference for taste and texture)

A few sprigs of rosemary

Four tablespoons of lemon juice

Salt and pepper to taste

Preparation

Rinse the quinoa and put it in a small saucepan with one cup of water and the vegetable stock. Cover the saucepan. Let it simmer for about 15 minutes until the water is gone and the quinoa looks a little clear.

Turn off the heat. Let the quinoa cool a little. Then use a fork to fluff it up.

At the time put the sweet potato and rosemary on a lightly oiled (olive oil or whatever oil you have on hand) baking tray at 350. Add some salt. Bake for about 15 to 20 minutes until they are done.

Cut the cucumber into cubes. Set aside for the final mix.

In a mixing bowl mix the spinach with the tuna, cubed cucumber, peas, kidney beans and crumbled feta. Once the quinoa and vegetables are ready. 

Allow the sweet potatoes and rosemary to be completely cooled down and then add them to the bowl. 

Add mayo, salt and pepper. Pour the lemon juice over everything and mix it all together. Serves 4.

I actually have a picnic I'm supposed to be attending this weekend and I was out of ideas and when I did go online looking for quick and simple recipes I kept coming up with complicated instructions coupled with over-priced ingredients. I pretty much have everything in the ingredients list here in my kitchen. So I'm going to try my hand at this and that red grape relish you guys recently posted here. I'll let you know how they turned out in a later comment!!
